Ripanço is the ancient technique, dating back to the roman ages, used traditionally in the South of Portugal for manually destemming the grapes using wooden rods. This is everything we love from Portugal being full of delicious ripe fruits and even a little bit of residual sugar to give it a touch of luxurious sweetness.
In Italy, the styles of Valpolicella Ripasso have become super popular in style because of their velvety softness whilst being rich and slightly sweet and the Ripanço is a nod in that direction whilst holding its own unique charm.
